Roasted sweet potatoes cake

This looks like some form of a chunky carrot cake, but it isn't. It does contain beta-carotene just like carrots though (which explains the orange colour).

Following with the 'leftovers' theme, I used leftover roasted sweet potatoes in this concoction of a cake.

I love sweet potatoes! Hehe. :)


Roasted sweet potatoes cake
Makes a small/medium rectangular cake

1 cup self raising flour
1/3 cup corn flour
1/2 tsp baking soda
3 tbsp sugar (Add more sugar if you like things sweet. This wasn't really sweet)

1 cup milk
1 tsp vanilla extract
1 tbsp corn oil
1 egg, lightly beaten

1-2 small roasted sweet potatoes, diced.

Preheat oven to 165C.

Sift and mix flours, sugar and baking soda in one bowl.
In another bowl, mix milk, vanilla extract, corn oil and egg.

Add the liquid mixture to the dry mixture until there are no lumps and is well combined.

Add in the diced sweet potatoes and mix.

Line or grease a baking tin. I lined a baking tin with baking paper.
Pour mixture into the tin and try to spread the sweet potato pieces evenly.

Bake at 165 for 30mins or until golden brown/cooked.
Transfer onto cooling rack before serving.


Look at the yummy pieces of roasted sweet potato! Mmm..

The cake is moist and not really sweet, but it tastes good to me because I don't really like extreme sweetness. And probably because I love sweet potatoes. Haha! I like how the sweet potato pieces make the cake just a little bit more brighter as well~ Hehe. Perfect for a cloudy/gloomy day.

Did I mention that I love roasted sweet potatoes? :D

Roasted sweet potatoes

I love roasted sweet potatoes! I can never get sick of them. Which is bad because I can tend to over stuff myself with them.. (which then makes me bloated and feeling sick). I call it starch poisoning. (Not sure if there's such a thing). But regardless of that, I'm happy when I have roasted sweet potatoes. :) They're so yummy! I love their natural sweetness. I would never add sugar to them like some people would. The only thing I would add to it is some cinnamon and/or mixed spice. It just enhances the flavour a little. (I love cinnamon too. Haha). I love roasted sweet potatoes! :D


I've been craving them for a while now. There's a whole box of golden sweet potatoes sitting at home. They were on sale the other week and I bought a lot.. about 6-8kgs worth. :D

They're basically fat-free, rich in carbohydrates (sugar, dietary fibre), potassium [maintains kidney, heart, digestive and skeletal muscle function], manganese [helps body utilise nutrients] and rich in vitamins (particularly vitamin A [good for vision, gene transcription, immune health, antioxidant and reduces risk of heart disease] and vitamin B6 [regulates and is involved with cell metabolism]. Roasted sweet potatoes
4 sweet potatoes
cinnamon/mixed spice, optional

Preheat oven to 240C.

Peel and wash sweet potatoes.
Slice them (~1.5-2cm thickness) and arrange on a baking tray lined with baking paper.
Sprinkle with cinnamon/mixed spice (brush them with a little bit of water if they're too dry).

Bake for 1-1 1/2 hrs, or until soft on the inside.
Serve immediately. (They don't taste as nice when they've cooled down)


I like to keep it in the oven until the bottom is slightly burnt, and the sweet potatoes are oozing out their natural juices. This tells me that they're nearly done.

I actually didn't sprinkle them with cinnamon until later on also (because others don't like cinnamon). You can do this too, but be aware that you might choke on cinnamon when you take a bite of the sweet potato. (The powder just flies to the back of your throat). I've done that a few times before.. :(

Slightly burnt. It gave it a crisp and I couldn't taste the burntness either. Yummy! Crisp on the outside and soft on the inside.

I love roasted sweet potatoes! But I can't have too much, nor can I have it too often. Too much of one thing is never good for anyone. I still believe it's starch poisoning. Because it happens with me and potatoes aswell. :(
