CNY: Kueh bangkit

My last bake for today, and my second CNY item. It's been a long day... and I have work early tomorrow morning. Boo. :(

I decided to try and make kueh bangkit. It's a Malaysian cookie, traditional for CNY. (Correct me if I'm wrong, because I'm not Malaysian nor know the correct facts other than from reading online. )

Well, this was sort of a disaster. The disaster being the time consumed. It was very hard kneading the dough, and needing to know when the consistency was perfect. I tried using my cookie press once again (attempt #2, cf. last attempt with macaroons). And that was a complete failure as well. The dough was not liquid enough to be used. So I gave up and just rolled the dough out and used a cookie cutter instead. Took me a while to carefully get 80 cookies ready for baking. But the end result is good. :) I now have 80 little people ready for CNY.



Kueh bangkit
Makes about 80 small cookies

3 cups tapioca flour
2 tbsp custard powder
1/2 tsp salt

2 egg yolks
1/2 cup caster sugar
1 tbsp margarine
1 tsp pandan essence
1 cup coconut cream

In a large wok dry fry tapioca flour until over low heat for 15mins.
Leave to cool.

Preheat oven to 170C.

Whisk egg yolks with sugar, then add margarine and whisk again.
Add in coconut cream.

In a large mixing bowl, sift tapioca flour, custard powder and salt.
Gradually add the liquid mixture bit by bit, to get the right consistency.
(Dough should not be shiny nor sticky)
Knead the dough.
Roll out to ~1cm thickness between sheets of baking paper, and cut shapes using cookie cutters (I used a mini man. It was the smallest cookie cutter I own, being about 2.5cm in size)

Kinda resembles cheese, doesn't it?

Bake at 170C for 10-15mins. Cookies should remain white, not golden.

I made a total of 80 little people kueh bangkit :)

Hehe. They left imprints! :D

The kueh melts in your mouth, and has a pandan and coconut fragrance to them. I like it, but.. I don't think I'll make it again until I find the perfect texture for the dough..

  3. I vaguely remember eating some melt-in-your-mouth cookies when I was a kid around CNY.. I wonder if these are it! I'm going to have to put these on my to-do list to find out. Where do I find pandan essence?

  5. Guiltless Glutton, pigpigscorner, Veggie Wedgie - Thanks guys! It was the smallest cookie cutter I could find in the house. I wanted bite size pieces, because as you would know, good things come in small packages! :)

    duodishes - Yeah, they do look like ghosts don't they. Haha. And when I stare at them for too long I see little stars/flowers. It's supposed to be a little gingerbread boy cookie cutter though.

    Cynthia - I found the pandan essence at an Asian grocer. Alternatively, you could dry fry the tapioca with pandan leaves if you can't find the essence/paste (I couldn't find the pandan leaves). Again, check out some Asian grocers for these items. :)
